Jamie's Fajitas
Chargrilled chicken fajitas with a fresh tomato salsa. Quick, colourful, and perfect for a midweek supper.
Jamie’s Fajitas

Ingredients
For the Filling
- 1 red pepper
- 1 medium red onion
- 2 chicken breasts (skinless and boneless)
- 1 tsp smoked paprika
- Pinch of ground cumin
- 2 limes
- Olive oil
For Serving
- 4 flour tortillas
- 150ml sour cream or natural yoghurt
- 230g guacamole
- 100g Cheddar
For the Salsa
- ½ red chilli (to taste)
- 15 cherry tomatoes (ripe)
- Bunch of fresh coriander
- 1 lime
- Extra virgin olive oil
Method
- Put your griddle pan on a high heat. Halve and deseed your pepper and cut it into thin strips. Peel, halve, and finely slice your onion1 medium red onion. Slice your chicken lengthways into long strips roughly the same size as your pepper strips.
- Put the peppers, onion1 medium red onion, and chicken into a bowl with the paprika1 tsp smoked paprika and cuminPinch of ground cumin. Squeeze over the juice of half a lime1 lime, drizzle over a lug of olive oilOlive oil, season with a good pinch of salt and pepper, and mix well. Put to one side to marinate for 5 minutes or so while you make your salsa.
- Finely chop your chilli½ red chilli (to taste). Roughly chop your tomatoes15 cherry tomatoes (ripe) and the corianderBunch of fresh coriander, stalks and all. Put the chilli½ red chilli (to taste) and tomatoes15 cherry tomatoes (ripe) into a second bowl with a good pinch of salt and pepper and the juice of 1 lime1 lime. Add a good lug of extra virgin olive oilExtra virgin olive oil, then stir in your chopped corianderBunch of fresh coriander.
- Use a pair of tongs to put all the pieces of pepper, onion1 medium red onion, and chicken into your preheated pan to cook for 6-8 minutes, until the chicken is golden and cooked through. As the pan will be really hot, keep turning the pieces of chicken and vegetables over so they don’t burn. You just want them to lightly chargrill to give you a lovely flavour.
- Warm your tortillas up in a microwave or a warm dry pan.
- Serve with the salsa, sour cream, guacamole230g guacamole, grated Cheddar100g Cheddar, and remaining lime1 lime.
☘ Tip
A griddle pan gives the nice charred effect you want with fajitas, but you can also use a large pan or wok. Give everything a drizzle with oil now and then so the chicken and peppers stay nice and shiny.
